I looooooooove these too! Even easier...

Instead of dropping individual cookies onto a sheet, just put it into a baking dish and pop them into the freezer. Cut and serve when firm. Just as delicious but it cuts down on the wait. :D

I love those! Unfortunately the last time I made them (and for a cookie exchange no less) they didn't set. Still trying to figure out why...that's only happened one other time before!

I was just talking about these with some moms at preschool today. The public schools in my area used to serve these in the cafeteria as a dessert when I was a kid. Whenever I make them, people who went to school here always say they fondly remember them for school. Not many things from the school cafeteria people fondly recall. :giggle:

yep use butter and quick cook oatmeal!!! LOVE it I soo have to make some tomorrow

I always use quick oats for these, because when I use old-fashioned they seem too tough to me.

I just made a batch with a half a bar of dark chocolate instead of cocoa powder. It tastes different but still yummy. Not sure about how well they set since I cooled them in the freezer.

For those who can't use, or don't like peanut butter, I'll share my mom's recipe:

4 C quick oats
7 Tbsp cocoa powder

1/2 stick margarine (4 Tbsp)
2/3 C milk
1 2/3 C sugar
1/2 Tbsp vanilla
Dash salt

Directions:

Mix oatmeal and cocoa in large bowl, and set aside. Combine margarine, milk and sugar in a sauce pan over medium heat. Stir constantly until it comes to a boil. When it starts boiling and foaming, remove from heat and add the vanilla. Stir into oatmeal mixture. Drop onto waxed paper and allow to cool and set up. Makes about 24 cookies.

If your cookies don't set, you probably didn't get the liquid ingredients quite hot enough, or didn't cook quite long enough.
