View Full Version : Super easy jelly!

Since we go through so much, I don't "can" mine. I just put them in a Ball or Mason jar with a lid and pop in the fridge.

4 cups apple juice(you can sub pretty much any juice, though
1 1/2 cups pureed blueberries
2 cups sugar (or 1 to 1-1/2 cups Splenda)
1 pack of no sugar added pectin( I can't remember the brand)

Heat apple juice in a pot until boiling, then add sugar/splenda, pureed blueberries, and pectin/sur-jell. Bring back to a boil and boil hard for 1 minute. Ladel into jars and pop in the fridge, or you can can them to last up to 1 year in the pantry. **I used this jelly today, and it is so yummy! I can't eve taste the apple juice, just the blueberries :)

Sounds good! Have you ever tried it w/ any other berry? Or maybe peaches?

this was the first time I had ever tried it, and honestly, the next time I won't even add any sugar. the juice and berries really make it sweet enough. The next time I'm going to try strawberries :)
