Quick as in I need one for today lol..I only have one huge Zucchini...

Here's what I have on my comp right now. I made it a few weeks ago as a bribe for Thing 1's surgeon. We were trying to get him to unwire her jaw. ;) I guess it was kinda good because he took the wires off the next day.

Zucchini Bread

2 C sugar
3 C flour
1/2 tsp salt
1 tsp baking soda
1/4 tsp baking powder
Mix together
Add 1 C oil
3 eggs
2 tsp cinnamon
1/2 or more chopped pecans (optional)
1 tbsp vanilla
2 C grated raw zucchini
1 C crushed pineapple, slightly drained

Mix well by hand and pour into 2 greased floured, and cinnamon sugared 8X5 inch loaf pans. Bake at 325 for 1 hour

Instead of just using grease and flour for the pans, I also use cinnamon and sugar. It gives the crust a little more seasoning and tastes yummaliscious. Also, I didn't use the nuts, and I didn't mix it by hand.

Oh, the pineapple was just an 8 oz can, drained.

Yea Im thinking its gonna make at LEAST 2 cups..its one of those 2 footers..:shakehead:

My mom gave me one that we sliced 1/3 widthwise for grilling, and then I was able to get 6 cups of shredded for bread. The bread that I made was from one of the frozen bags in the freezer. I made pumpkin pancakes this weekend, so I'm about to go make pumpkin bread with the rest of the can.
